A yummy clean version of the classic fall crumble!
Vegan Apple Pecan Crumble
What you will need:
Dry Ingredients:
- 1/2 cups gluten free rolled oats
- 1/4 cup of almond flour
- 1/2 tsp of baking soda
- 1/2 tsp of baking powder
- 2 tsp of cinnamon or apple pie spice ( if you don’t have APS just use cinnamon)
- 1 tsp of sea salt
Wet Ingredients:
- 3 Large apples ( more nutrition if you leave the peels on 😉 )
- 1 Tbl of fresh lemon juice
- a little lemon zest
- 4 tbsp of coconut oil
- 1 tsp of PURE vanilla
- 1/4 cup of halved pecans
- Preheat the oven to 350 degrees celsius
- Start with 2 large mixing bowls
- Whisk the dry ingredients together
- Chop up the apples in to bite size pieces, then melt 2 tbl of coconut oil and drizzle over combining with all wet ingredients making sure apples are coated evenly
- Add the remaining 2 tbl of Coconut oil to the dry mixture ( does not have to be melted)
- lightly oil a 8×8 ( or cute pie pan)
- Pour apple, pecan mixture in to the pan then top with the crumbly oat mixture.
- Bake for 25 – 30 minutes, the top should be golden brown and a caramel colour
- You may top with some organic yogurt or coconut yogurt to keep it vegan, and some extra pecans 🙂
