Bringin back those warm summer nights with this one! Fresh, fruity Fish Tacos!

First the Mango Avo Salsa
What You’ll Need:
- 2 fresh mangoes, diced
- 1⁄4 cup crushed pineapple
- 1/2 Ripe Avocado diced up
- 1/2 garden tomato
- 1⁄4 red bell pepper, coarsely chopped
- 1⁄4 green bell pepper, coarsely chopped
- 1 jalapeno pepper, seeded and minced finely (optional)
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced finely
- 2 tablespoons chopped fresh cilantro, or parsley ( i personally despise cilantro so i used parsley)
- 2 teaspoons fresh lime juice, or lemon or 2 teaspoons lemon juice ( all i had on hand)
- 1⁄2 teaspoon red pepper flakes(optional)
- salt and pepper (to season)
Mix all these ingredients in a large bowl and let sit in the fridge while you cook the fish up.
The Fish
A dense fish works best for this one ( Basa or Pickerel are awesome)
Just pan fry it with some coconut oil and garlic and S&P ( remember no table salt, its poison, just sea salt 🙂 )
What to Do:
- Mash the fish up with a fork gently
- Using 1 corn tortilla ( i like the small ones )…. heat up a pan with some coconut oil, rub the tortilla around until it becomes a little brown in the pan
- spoon in the fish and layer the salsa mixture on top
- Optional* i like some fresh lettuce diced and put on the very top
These tacos are a healthy, easy option to clean…fresh…delicious eating
