
Hows about some super easy, tasty, peanut buttery, pumpkin spice latte inspired fall explosion balls!
What You’ll Need:
For the Simple – Chocolate / Pumpkin Spiced Version:
1 cup quick oats
– 1/2 cup ground flax seed
– 1 tbsp chia seeds
– 1 tbsp pumpkin spice
– 2/3 cup unsweetened coconut
-2/3 cup dark chocolate chips
– 1 cup all natural Peanut Butter
– 1/3 cup natural honey
Mix all together – Freeze- makes 16 Balls
For the Coconut Peanut Butter Pumpkin Spice fall balls:
- 1/2 cup Gluten free rolled oats
- 2 1/2 scoops of sprouted brown rice protein powder — see my suggestions HERE
- 1/4 cup of unsweetened shredded coconut flakes
- 2 tsp of pumpkin spice mix ( bulk barn it or make your own its easy)
- 1/2 tsp of sea salt
- 1 tsp of coconut palm sugar ( optional)
- 1/2 tsp of cinnamon
- 1/4 cup organic all natural peanut butter
- 1/4 cup of unsweetened almond milk ( or nut milk of choice)
- 2 tsp of organic natural vanilla extract
What to do:
- Begin by mixing the first 7 ingredients together ( all the dry first) In a large mixing bowl
- Then in the same bowl mix in the wet ingredients ( PB, almond milk and vanilla)
- When the batter starts to come together, take out with a tablespoon and roll in your hands into little balls should make about 15 balls.
- Roll the balls in some extra flaked coconut mixed with a little cinnamon for an extra coconutty touch!
