My love of sushi will never ever end. BUT Most rolls can pack up to 450 calories and with the white rice, soy sauce and “special sauce” that can be more like 900 calories. SO I came up with a sushi bowl packed with nutrient rich ingredients like brown rice, organic edamame beans, & toasted sea vegetable nori sheets. Topped off with a creamy tahini dressing. Try it out.. it’s pretty much the bomb.

What You’ll Need For the Bowl:
- 1 cup organic brown rice
- 1 nori sheet, cut in to small pieces ( this one is good )
- 1/4 cup shredded red cabbage
- 1/4 cup cucumber, thinly sliced
- 1/8 cup carrot strips, peeled with a veggie peeler
- 1/4 avocado, sliced
- 1/2 cup of steamed organic edamame beans
- handful of sprouts
What You’ll Need for the Sauce:
- 1 tbl of organic, extra virgin olive oil
- 1 tbl of organic sesame oil
- Juice of 1/2 lemon
- 1 tbl of pure maple syrup or 2 tsp of stevia powder
- 1/2 inch of fresh ginger grated
- 1 tbl of tahini paste
- 1/2 tsp sea salt & 1/2 tsp of cayenne pepper
- 2 tbl of sesame seeds
What to Do:
- Cook the brown rice according to package directions
- While rice is cooking, cut, slice and dice all other ingredients
- Cut up the Nori sheet with scissors, set aside
- Make dressing in a small blender or whisk them all together in a small bowl
- When rice is ready pile all ingredients together except the avocado and mix in sauce.
- Now add the avocado on top for pretty presentation & hot sauce if you so desire 😉
