I love how rich & creamy this vegan mousse is without all the added sugars and heavy creams. I had this dessert at a spa & when I read the ingredients I knew I had to recreate it!
This is a dessert you can feel good about eating! Using all whole food ingredients that will nourish your body & skin. Enjoy this one babes Xx.
What You’ll Need:
1/2 cup dark chocolate chips ( see HERE for vegan options)
2 tsp grated dark chocolate for topping ( or use extra vegan chocolate chips)
2 Tbsp pure coconut oil
4 avocados ripe peeled and pitted
1/2 cup pure maple syrup
2 Tbsp unsweetened cocoa powder
1/3 cup unsweetned almond milk
1 tablespoon pure vanilla extract
1/4 teaspoon course sea salt
Fresh raspberries for topping
Coconut Whip for layering ( or use coconut yogurt, greek yogurt etc)
Cocoa Crunch from epicure for topping ( optional)
What You’ll Need:
- On the stove, create a double boiler which means to have boiling water in a pot and a bowl on top of that pot ( not touching the water)
- Pour the chocolate chips into the bowl and the coconut oil
- Mix until all is melted and combined together, set aside while we prepare the avo portion
- In a food processor, combine the avocados, maple syrup, cocoa powder, almond milk & vanilla extract- blend for 10 seconds
- Next pour in the melted chocolate and salt and blend for about 2 minutes
- Scrape down the sides of the food processor as you go making sure its completely smooth
- In a jar or glass mug layer the mousse and yogurt ( or vegan coconut whip ) and garnish with raspberries & extra chocolate chips/shavings!
