I mostly eat this for breakfast but I’m sure its a dessert to some people 😉

For the Topping ( BEST part )
- 1/2 cup light spelt flour ( whole wheat will work )
- 3/4 cup old fashion rolled oats
- 1.5 tsp cinnamon
- 2 tbsp coconut sugar
- 1.5 tbsp coconut oil , melted
For the Filling
- 5 cups finely diced green apples ( make sure they are cut small ish ) – Peel on is fine
- 1.5 tbsp corn starch or arrowroot starch
- juice of half a lemon
- 2 tbsp maple sugar
- 1/4 tsp nutmeg
- 1/4 tsp cloves
- 1.5 tsp cinnamon
How to Prepare:
- Preheat the oven to 350°F, and coat an 8″ pan with nonstick cooking spray.
- To prepare the topping, whisk together the oats, flour, and cinnamon in a small bowl. Make a hole in the centre. Pour in the coconut sugar and melted butter mixture- Stir until fully incorporated.
- To prepare the filling, toss the apples with the cornstarch ( or arrowroot ) , cinnamon, nutmeg, cloves. Squeeze the lemon juice and toss – in a large bowl until completely coated.
- Transfer the filling to the prepared pan, and gently press down with a spatula. Sprinkle evenly with the topping.
- Bake at 350°F for 50-60 minutes or until the apples are fork tender. Cool completely to room temperature; then refrigerate for at least 3 hours before serving to allow the juices to fully thicken.
